Artisanal cheeses made with love and science
At the heart of Loam is their passion for artisanal cheese. They specialise in everything cheese, from marinated feta and cloth-bound cheddar to caprino aged for five months. Additionally, each cheese is crafted with care, reflecting a balance of science and art.
Their signature orange farm cheddar, infused with orange, offers a delightful combination of citrusy notes and earthy undertones. The signature spice rub cheese, with flavours deepening as it ages, is another highlight. Moreover, patrons can sample and purchase from their wide range of cheeses. For those looking to pair their cheese with something special, Loam offers lavash, seed crackers, and more.
The flavours of Loam
While tasting the dishes, here I admired how easily and deliciously Loam introduces artisanal cheeses of varied tastes to the Indian taste palate. Here, we recommend dishes from their fromagerie section of their menu. Moreover, the dishes we tried were the Bouche Salad, the Cheese Pie, and the Halloumi.
The Halloumi
The halloumi in this dish is grilled to perfection, offering a chewy yet authentic texture. It’s served with flavoured sourdough crisps, hot honey (a blend of honey, chilli, and paprika), and a mixed green salad with pickled vegetables. Furthermore, this was my personal favourite, and I simply couldn’t get enough of it.
The Cheese Pie
The cheese pie is a star attraction, featuring mozzarella, orange cheddar, young jack, and cloth-bound cheddar mixed with béchamel sauce and garnished with macadamia nuts. The in-house-made tart is crispy and complements the cheeses beautifully, making this savoury delight a must-try. This pie consists of the best of all cheeses and is a must-try for the ultimate cheese lover. While this dish may look small, as you dig into it, you will find its portion size more than filling.
The Bouche Salad
The bouche salad, exclusive to Loam, features their signature cheese paired with beetroot, figs, baby beetroot, sweet potato jam, soaked raisins, and mixed lettuce. The sharp flavours of the cheese, combined with the crisp salad, create a harmonious dish that is sure to impress even the most discerning palates.
My experience at Loam
Loam is exactly what one imagines when they think of artisanal cheese. Each ingredient in their dishes shines, creating unforgettable culinary experiences. Whether you’re a seasoned cheese lover or a curious newbie, Loam promises to change the way you think about cheese. Everything here is made in-house, ensuring the freshness and quality of every bite. So, if you’re in Pune and have a love for cheese, or even if you don’t, Loam is the place to be. Loam is a journey into the world of artisanal cheese, one bite at a time.
